Palm sap collected and fermented. The British adapted it into hot toddy, whisky with honey, lemon, and hot water. The Indian version is sweet when fresh, becomes alcoholic within hours. Toddy shops in Kerala serve it with spicy food. The collection technique involves climbing palm trees at dawn.
