About Tequila
Must be made from blue agave in specific Mexican states. Takes 7-10 years for an agave plant to mature. Only the pinas, the heart, are roasted and fermented. Blanco is unaged, reposado rests 2-12 months, anejo over 1 year. The worm in mezcal is a marketing invention, not tradition.
