About Palm Wine
Sap collected from palm trees, fermented naturally within hours. Called emu in Nigeria, toddy in India. Maximum 4% ABV when fresh, gets stronger as it ferments. Collected at dawn before the heat speeds fermentation. Essential at Nigerian weddings and funerals. Over 50 million liters consumed annually in West Africa.
