About Champagne
Only sparkling wine from the Champagne region can legally use the name. Dom Perignon perfected the technique. The bubbles come from a second fermentation in the bottle. A standard bottle contains about 49 million bubbles. The pressure is 90 psi, three times a car tire. Only three grape varieties are permitted.
