About Boza

A thick, sweet fermented drink made from millet, wheat, or rye. Popular in Bulgaria, Turkey, Romania, and Albania. Low alcohol, typically under 1%. The texture is smooth and pudding-like. Turkish boza is sweeter, Bulgarian version is more tart. Over 1,000 years of continuous production. Often served with roasted chickpeas.
