Brewed from polished rice, not distilled. The rice polishing ratio determines quality grades. Junmai uses no added alcohol. Daiginjo requires rice polished to at least 50%. Served warm for cheaper grades, cold for premium. The fermentation process is unique, involving simultaneous saccharification and fermentation.
